Vegetable soup

Each houswife can prepare the same meal differently, because each one has her one culinary secrets. Vegetable soup is the first-course for dinner in our family. My mother uses these indegrients for preparing it:50ml of oil2 onions3 carrots1 swede2 potatoes3 celery stalks200g of tomatoes125g of dried butter beans1 bay leafsalt and pepper to taste2l of beef stock125g of peas

Soak the butter beans and leave them for the night. On the second day draine them and the tomatoes. Chop the onions, carrots, swede, potatoes and celery.Heat the oil in a saucepan. Add the onions, carrots, swede, potatoes and celery and fry for 10 minutes. Add the tomatoes, beans and bay leaf and salt and pepper to taste and pour in to the stock. Bring to the boil, then simmer everything for 20 minutes.Strain the soup and pour the liquid back into the pan along with about half of the vegetables in the strainer. Discard the bay leaf and rub the rest of the vegetables throught the strainer to form a purée. Add the puréed vegetables and the peas to the soup and bring to the boil. Simmer for 5 to 10 minutes, or until the peas are tender.Serve it warm or even steaming in a soup bowl. Bon appétit!
